A clue to Herbert Wilson is found in Kelly’s Directory of Sheffield, 1893 when an entry for Herbert is cross-referenced to '–see Wilson, Walter & Sons' which leads to Wilson, Walter, 214 London Road, cutlery merchant.
The most likely candidate for a Herbert Wilson with father Walter is found in the 1871 census for Bramwell Street, where Walter is aged 28, i.e. born about 1842 and Herbert is aged 3, i.e. born about 1868. Walter’s occupation is listed as brass turner/ cutler.
Ten years later, the family are in Shoreham street and Waller’s occupation is given as German Silver & Ivory Turner Employing Three Boys (white metal worker), closer to a manufacturer of table knives.
In 1891, they are at 409 Shoreham Street where the family are listed as:

Walter, according to an Ancestry Christening Index, was born 20 Oct 1842, baptised 29 Jan 1843 in Sheffield, father George, mother Ellen.
According to a Find My Past search, Walter Wilson married Elizabeth Ward, Apr-Jun 1865, Ecclesall Bierlow, Sheffield 9c 287
